Yes, I cooked LOL. Most people that know me, know that I don’t really like cooking very much although I do get into random moods to cook. But trust me, I LOVE pasta so I did not mind cooking this time.

This dish was inspired by Juanitaeats. She is a food blogger on Instagram and her page is absolutely beautiful. She’ll have you drooling and planning your next outing to the hottest restaurant or food spot.

Today’s dish is Penne Chicken Alfredo. I got this recipe from looking through different cooking websites and watching a lot of YouTube videos that I don’t even remember (I do remember one and I’ll put a link to it at the bottom of this article)

My initial plan was to cook a Fettuccine Chicken Alfredo dish but I didn’t realise how hard it was to find Fettuccine pasta in my area. I also couldn’t find Heavy cream so I had to find a substitute which was butter and milk.

Note: I am not specifying any measurement as I didn’t really follow any exact measurement because I was really just vibing for real

INGREDIENTS:

1. Penne Pasta

2. Chicken

So I was supposed to use chicken breasts but the store I was supposed to get it from, did not have it so we had to use another part of the chicken (different parts actually) and it was so hard cutting off the meat from the bones so please if you are recreating, use all possible means to find chicken breasts and don’t stress yourself.

3. Cheese:

I’m not going to lie, I actually do not know the name of the cheese I used because it wasn’t written on the pack, but the recipes I looked up said to use Parmesan cheese (grated)

4. Butter:

i used the Golden Penny Spread

5. Garlic:

I used two cloves of garlic

6. Parsley:

You guys, I don’t know if it’s just me but chopping parsley is so hard. Please is there like a special way to do it? Oh wait, there is! There is a parsley grinder which you can get from Jumia.

7. Milk

I used three sachets of Arla Dano milk and mixed it with water (and I also added a bit of Holandia Evap evaporated milk and I honestly don’t know why I did that because it didn’t really change anything)

Other Spices/ingredients Used (not pictured):

They are not pictured because I forgot 😦

  1. Black Pepper

2. Salt

3. Knorr cubes (just one out of the double cubes one)

4. Nutmeg (grated)

5. Thyme

6. Oil

7. Flour

Directions

1. Start off by cutting up your chicken and putting it into a zip lock transparent bag

2. Put little oil into the bag containing the chicken and season chicken with One cube of knorr chicken cube, thyme, salt and black pepper

3. Zip up bag and marinate chicken for about two hours (I kept it in the fridge)

4. After marinating, take out chicken (now deeply coated with the spices)

5. Oil your pan and add little chopped garlic before putting in your chicken.

6. When chicken is done, set aside.

7. Boil pasta in salt water according to package instructions (mine said boil for 11-12 minutes for Al-Dente perfection)

8. Using the same pan, put in your butter and garlic.

9. When butter is melted and your chopped garlic is soft, add in your flour and mix very well

10. Add in your milk and leave to boil

11. Add in your grated cheese and whisk/turn

12. Add black pepper, salt, nutmeg and a little bit of chopped parsley

13. When sauce is thick, add in chicken and pasta and turn together then leave for a bit

14. When sauce and pasta is well incorporated, that’s it!

15. Garnish with Grated cheese and parsley and enjoy!

Note: I am not a professional cook but this is just what I did and it came out great, and I was really proud of my chicken especially.

My family members really liked it but my mum said the pasta wasn’t really as soft as she would’ve liked and I agree. I wish I would’ve left it for another minute or two

Well, that’s it! I really enjoyed making this and I can’t wait to try out other recipes.
